Bauer Winery
Bauer
Bauer is a small, precision-driven winery founded in 2012 by winemaker Oliver Bauer in Dragasani, one of Romania's most distinctive historic wine-growing areas. Created around a deeply personal approach to winemaking, the estate focuses on limited production and wines with a clear sense of origin.
Working with around five hectares and carefully selected vineyard parcels, Bauer gives particular attention to native and lesser-known varieties such as Cramposie Selectionata, Negru de Dragasani and Novac, alongside selected international grapes. Small-lot vinification allows each variety and parcel to retain its individual character.
In the cellar, stainless steel and carefully judged oak are used to support rather than dominate the fruit. The result is a distinctive collection of pure, textured and gastronomic wines that reflects both the personality of Oliver Bauer and the individuality of the Dragasani terroir.
